Cilantro Lime Dressing for Taco Salads

Taco salad has been my go-to dinner as of late. Taco night used to be a regular occurrence in my house, but this salad option has taken over. It's all the deliciousness of taco night without the calories. Yes please! The great thing about taco salad is there is no wrong way to do it. You can be as creative as you want and bet that it will still be delicious. Since I've been serving taco salad for dinner, we haven't had it exactly the same way once. It's just more fun that way! Recently, I decided to get a little festive and make my own cilantro lime dressing. It added a different kick to the salad that I really loved! It was super simple, and I already had most of the ingredients on hand. Winning!

As I mentioned above, taco salads can be done six ways to Sunday. If you're struggling for ideas, here is what I like to include at any given time: lettuce, taco meat, guacamole or sliced avocados, diced tomatoes, corn, black beans, sour cream, crushed tortilla chips, cilantro, and salsa. Once you have your salad assembled, drizzle a little cilantro lime dressing over it to complete the meal!

 
Ingredients:
1 cup loosely packed cilantro, chopped and stems removed
1/2 cup plain Greek yogurt
lime juice from 1/2 lime (2 Tbsp)
2 tsp minced garlic
1/4 cup olive oil
1 tsp white wine
pinch of salt

Directions:
1. Place all ingredients in a blender or food processor and puree until smooth.
2. Adjust seasonings to taste. Pour over salad and enjoy!
