I think I have said this before, but I get into such a lunch rut. Parker and I aren't the types of people who crave the same sandwich every day, and I find myself constantly wanting to switch things up. I find so much inspiration for new dinners and am always wanting to try new ideas, but lunch is the red-headed step child. I recently made these bacon avocado grilled cheeses for Parker and myself, and it was like a breath of fresh air. So yummy, so easy, and finally something a little bit different!
Ingredients (makes 2 grilled cheeses):
1 Tbsp butter
4 slices of bread of your choice
4 slices of cheese- I used cheddar and swiss
4 slices of bacon, cooked- we like turkey bacon
1/2 an avocado, sliced
*1/2 an avocado yields plenty for the grilled cheeses, so mash up the rest for a small portion of guacamole on the side!
1. Melt butter in a large skillet over medium heat.
2. Place one slice of bread in the skillet. Top with half of your ingredients, and finish with the final piece of bread.
3. If your skillet is large enough, do the same with the other sandwich so they can cook together. If not, cook your sandwiches one after the other.
4. Let heat for 1-2 minutes, or until golden brown. Flip sandwich and heat another 1-2 minutes, or until your bread is toasted and cheese is melted.
Honestly, this meal isn't rocket science, but it is a fun twist on lunch that we loved!
