Zucchini Parmesan Bites

Thanks to my blogging friend Jamie for sharing this recipe for a simple summer side. I am always looking for new ways to incorporate veggies into our dinners, and I really enjoyed these little Zucchini Parmesan Bites. They are the perfect appetizer or side dish along whatever goodness you've got cooking on the grill!

Ingredients (serves 4):
2 medium zucchinis, sliced into 1/4 inch rounds
1 Tbsp EVOO
1/4 cup grated Parmesan cheese
1/4 cup dry bread crumbs
Pinch of garlic salt

Directions:
1. Preheat oven to 450 degrees and spray a cookie sheet with cooking spray.
2. In a medium bowl, toss the zucchini with the EVOO until fully coated. Set aside.
3. In a small bowl, combine the Parmesan cheese, bread crumbs, and garlic salt.
4. Dip each zucchini round into the Parmesan mixture to coat evenly on both sides. Press gently so the coating sticks.
5. Place each round on your cookie sheet and bake 25-30 minutes, or until browned and crisped.

that does sound really tasty. i'm glad you don't actually have to grate them its just clean slices! less fuss! Must admit I did google what on earth EVOO was haha! New acronym learnt haha! thanks

Yum! I love all zucchini, but I think baked and crispy might be my favorite kind! So good!

I'm glad you liked them! I can't tell you have many times these have been my go-to. I've been cut them lengthwise for a change up :)
