Sausage Breakfast Muffins

I try to make a big batch of some sort of breakfast food at the beginning of the week. I don't always accomplish this, but I know the husband appreciates having something savory to grab on the way out the door instead of a breakfast bar. 

I stumbled across the recipe for these sausage breakfast muffins and was sold. Already individually portioned and straight up delicious... the perfect on-the-go breakfast!

This recipe makes about 20 muffins. 

Ingredients:
1 lb uncooked breakfast sausage
4 cups Bisquick
2 1/2 cups milk
2 eggs
1 1/2 cups shredded cheddar cheese

Directions:
1. Preheat oven to 400 degrees and line a muffin tin with muffin cups for easy cleanup. 
2. In a large mixing bowl, stir together your uncooked breakfast sausage and Bisquick with a wooden spoon. They won't completely combine. Just knead the sausage and Bisquick together as well as you can.
3. In a second bowl, whisk together milk and eggs. Pour this mixture into your sausage mixture and stir together to combine. Stir in cheese. The batter will be thick and lumpy. 
4. Divide batter into your muffin cups and bake about 20 minutes or until golden brown.

Yumm! I try to make a breakfast casserole in the crock pot on Sunday night.. then portion it out for the rest of the week on Monday morning. But I'm gonna make these next time. Thanks for sharing!
